I would like to know what the guys out there think. I had a boyfriend who told me his best friend was a girl. That was ok, then he said (after some time) that they used to see each other and they were engaged. Can ex's really be just friends, or is one of them holding on hoping for more one day?

there no wright or wrong answer to this question , if they broke because the sex was no good but the relation was ok and you give him the sex he need , it could be possible , but if you dont like sex , or if they had great sex but could not live togheter , but if he always see her when you are not there and if he leave you alone at home tu meet with her, it dos not look good

Yes, you can be friends with an ex, sometimes people just grow apart and want different things, go their seperate ways.....I don't think its a good idea for ex's to hang out every day but they can be casual friends.
